These flavorful gluten free cookies are mildly sweet and contain a nourishing mix of protein, healthy fat and fiber; a terrific way to greet the day! 

Including prep and cooking time, you can enjoy this tasty treat in about an hour. To enjoy the cookies at a later time, they may also be frozen. 

Ingredients

1 1/2 cups quick cooking oats

1 cup almond flour

1 tsp baking powder

1 tsp ground cinnamon 

3/4 tsp kosher salt

1/4 tsp nutmeg 

1/2 tsp ground ginger

1 large egg plus 1 egg white, whisked

1/2 cup neutral oil, such as canola or safflower

1/3 cup maple syrup

1 1/2 tsp vanilla extract

1 1/2 cups freshly grated carrots (about 4 medium) 

1/2 cup walnuts chopped 

1 Tbsp ground flax meal 

Prep time: 20 minutes
Total time: 50 minutes 
Yield 12 cookies 

Preparation

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper. 
  2. Whisk oats, almond flour, baking powder, cinnamon, salt, nutmeg and ginger in a large bowl. 
  3. Making a well in the center of the dry mixture, add the whisked egg and egg white, oil, syrup, vanilla and whisk well. Stir in carrots, walnuts and flax meal. Mix well. 
  4. Portion mix by 1/4 cupfuls, making approximately 12 balls. Arrange 1 inch apart on the baking sheet, and press to flatten slightly. 
  5. Bake until cookies are golden and tops are slightly cracked about 30 minutes. Cool on baking sheet to set, about 20 minutes.
